Christmas Pasta with Broccoli Pesto, Crispy Bacon & Hazelnuts

INGREDIENTS

  • 400 g Christmas Pasta

  • 60 g smoked bacon cubes

  • 250 g broccoli florets

  • 60 g olive oil

  • 20 g pine nuts

  • 10 g walnuts

  • 20 g grated Parmigiano Reggiano

  • Chopped hazelnuts, to taste.

  • Salt and pepper, to taste

PREPARATION

Step 1
Blanch the broccoli florets for 5 minutes. Drain them (keep the cooking water!) and transfer to a blender.
Step 2
Add walnuts, pine nuts, grated Parmigiano Reggiano, salt, and extra virgin olive oil.
Step 3
Blend until creamy. If the pesto is too thick, add a little more oil or cooking water.
Step 4
In the same pot, cook the pasta, draining it 2 minutes before fully done.
Step 5
In a skillet, heat a drizzle of olive oil and crisp up the bacon. Add the pasta and broccoli pesto.
Step 6
Toss everything together until creamy. Serve topped with chopped hazelnuts.
